I am curious is it OK to have it filled like this where leaves are touching as long as you have airflow going and conditions down? It doesn’t matter if leaves are laying on top of each other and covering each other up or do you do a defoliation later on I am curious.

You can do whatever you want. If you maintain your humidity and temperature correctly, the odds of having an issue are very slim. If I have a rH spike, it could turn into a problem over time. Remember, everything takes time so the only way it happens is neglect.
